Forest honey is produced by bees from oak, holm oak and cork oak forests. Actually, it is considered honeydew, honeydew or honeydew, since it is not made with the nectar of flowers but from the sugary solutions that bees collect from the leaves of the trees.
For this reason, bees continue to make honey when most of the flowers have bloomed, that is, until late August or early fall.
Characteristics of forest honey
Generally, honey has a dark amber color, although depending on the variety of honeydew, its color may change. Likewise, its flavor is strong, a little sweet and with salty notes; so it is less sweet than other varieties of honey.

Is there forest honey all year round?
Unlike other types of honey, Forest Honey is a field honey and cannot be obtained during a good part of the year.
In Maes Honey we collect and sell forest honey only during the period from October to December and it is not marketed again until the following season, so it is a seasonal food product.
